In collaboration with the Department of Horticulture, the Department of Nutrition and Foods developed the Certificate of Proficiency in Plant-Based Nutrition & Sustainable Agriculture to provide students with the "know-how" to improve overall health and the health of the environment.
Human and Planetary Health
- Include Plants: Plants are packed with antioxidants and phytonutrients that have been linked to the prevention of diseases and promote overall health. By embracing a plant-forward diet, you're nourishing your body from the inside out.
- Protect Our Planet: Eat more plant foods; it's an accessible and impactful way to help our planet. Plant-based agriculture is inherently more sustainable, requiring less land and resources than animal agriculture. By choosing plant-forward options, you're contributing to a healthier and more resilient ecosystem.
Plant-Based Trends and Statistics
- Sustainability and local food are top priorities for chefs and consumers alike.
- The "Meatless Monday" campaign is gaining momentum, highlighting the environmental and health benefits of reducing meat consumption.
- More and more Americans are seeking out vegetarian and plant-based options when dining out.
